代谢组学在水产品品质与安全中的研究进展(5)
现阶段关于多组学技术联用在水产品品质与安全应用较少,特别是在水产品贮运加工方面,需要多组学技术以不同切入点研究原料来源、微生物的组成与变化、蛋白质变性降解氧化、脂肪降解氧化及其与蛋白氧化之间的相互关系,从而进一步探究水产品品质与安全变化机理,更具针对性地调控相关品质衰败、产品安全问题。总体说来,代谢组学技术在研究水产品品质与安全中的应用有待进一步的提高,与其他组学技术联用,同时结合生物信息学、数学建模和建立数据库等方法,促进代谢组学技术在水产品品质安全中的应用,以保障品质好、安全性高的水产品供给。
